Tuesday of my spring break

i went to the dentist and i have to get my wosdom teeth surgely taken out ;( and hen i went to my interview for subway and i did really well fro how nervouse i was it was my first interview ever and i got the job!!:)

i went to the ZOO! we went with my two brother, my mom, my grandmother, anut, cousin and her friend, and my other cousin.  me and hayden went on our own after a while because they were so slow.  we had great brother and sister bonding time! then i got a call from subway asking to have an interview with me!

Sunday

this sunday my honduran boyfriend was supposed to come over to my house at five. it didnt show or even called to say he wasnt going to make it! and then when he did finally text me back i wait ed to see if he would mention it but he never did! so i asked him where he was at five and he said that he had gotten into a fight with his friends about us. apparently they dont think im good enough for him and he was defending us.   now it going to be awkward when i go in the resturant he works at since one of his friends work there too.

I got a new job at subway! now i have two jobs including my grandmothers store:) this week i work everyday except tuesday ughh but at least now i will have to money to fix up my barn

This recipie is from his home town!! San Pedro Sula

San Pedro Sula Simmered Beef
Use this as a decilious taco or tortilla filling.  I have worked and worked with this recipe until I am satisfied.  My guests seem to be as well.

(6) Servings

1 lb. bottom round of beef (any good cut will work).  Trim any excess fat
2 T. olive oil
1 small chopped onion
4 cloves minced garlic – (we are heavy on garlic; you can back off)
1/8 C white flour
1 can (14-15 oz.) stewed tomatoes (preferably with green chilis)
1 can (7 oz.) diced green chilis (fresh is even better – poblanos are mild and work well)
1 jalapeƱo – diced (carefully washing hands after dicing)
¼ C water
1/4 C red wine (increase water amount above if you as a 'purist' choose not to use wine)
½ t. oregano
1/2 t cumin
Salt to taste.  Don't overdo.  If you are using canned vegetables, often the salt from them is sufficient.


Cut meat into 1 inch pieces.  Brown meat in olive oil. Add onion and garlic, cooking until soft.

Sprinkle the flour over the browned meat; cook 2 minutes. Then, add remaining ingredients.  Stir. Cover and simmer on very low for 1 to 1.5 hours, checking and adding water/wine as needed. Stir occasionally (every time you yell at the kids seems to work well).

To serve, garnish with sour cream (or plain, unsweetened yogurt) on tortillas/tacos with cheese, lettuce, diced tomatoes, your favorite finishings.

Honduran Food~papusas

My boyfriend is orginally from honduras and i was looking up honduran food to mae for his birthdday.  thiss looks amaxzingly good.

Prep Time: 10 mins
Total Time: 15 mins
  1. 1 Mix the masa harina, cumin, salt and water into a dough which is soft but not sticky. Be prepared to add more flour if necessary. If it is too dry, add more water.
  2. 2 To make a 3 inch round papusa, take about half a cup of dough and roll it into a ball. flatten with your hand.
  3. 3 Put the filling in the centre [in this case, cheese, cilantro, salt and pepper].
  4. 4 Work the edges up over the filling and again form a ball, completely enclosing the filling.
  5. 5 Flatten each ball to about 1/4 inch or less and cook the papusas on a hot, lightly oiled griddle for about 3 minutes per side, or until both sides are lightly browned.
  6. 6 Serve warm.

exciting weekend

Friday night my horse got out.  I found her the next morning on the other side of the fence. So I jumped on her bareback and was riding her to put her back in the pasture she slipped and fell on my hips. Then she used the back part of my leg to stand up with.
I and my mother argued about going to the doctor.  She then convinced me to go and we stay there from 1 pm to midnight. They did a CT scan and said everything was fine.

College Acceptance Letter

An event that thoroughly changed my life was when I ‘stole’ my horses.  It gave me many qualities, or should I say brought out my many qualities.  Some of those qualities are my passion, creativeness, and stubbornness.
My passion for my horses, which I cared so much about, could have easily been looked at insanity.  My horses were supposedly being starved, so I would not stand by and do nothing.  The man that was supposed to be caring for them was a very terrifying man.  My mother was so scared that she would not go up there to get them herself.  So I snuck up there and took them myself and two other friends.  I was also willing to fight the cold February night air to get them away from there.  When it was all said and done, I accepted my punishment, strict grounding until summer, and never complained once.
My creative side came out in many areas throughout our journey.  We couldn’t figure out how we were to get them out of the pasture, because the only gate was near the man’s house.  I deiced that we need to cut the fence and go out the back.  Then it became very cold when the sun went down.  We could not start a fire because it would have cause to much attention.  I gathered up pine needles and covered us with them.  Then the wind began to pick up and blow under the pine needle and blow them all around.  I knew we were near a veterinarian clinic, so we moved the horses there inside the barn.  We were going to camp in the hay loft.  Then the police pulled in behind us.
I am a very strong-willed person.  Even though I was terrified by being caught by the police, I held my head high and didn’t show them how scared I truly was.  In my mind I had done nothing wrong and no one could convince me otherwise.  Although I knew my actions a server consequence, I still did not let that deter me from what I felt was right.  My stubbornness help give me courage to stand up to what I believed in.
In conclusion, when I believe in something I will pursue it until the end.  The qualities about myself that I take pride in are my stubbornness, my creativeness, and my passion.  A great quote by Joan Jett states, “I think I was born strong-willed.  That’s not the kind of thing you can learn.  The advantage is you stick to what you believe in and rarely get pushed out of what you want to do.”
